Remove the fat and you have defatted drippings. (Drippings can be put in the freezer if you are in a hurry.) Heat defatted drippings in a saucepan. As soon as they become liquid, put a little of the liquid in a cup, add cornstarch and mix. Pour back into defatted drippings. Add other ingredients. Simmer until gravy thickens slightly.
